Keto Cream Cheese Stuffed Pumpkin Muffins
Ingredients
Muffins:
- 4 eggs
- 1/2 cup coconut oil melted and 2 tablespoons butter melted together
- 1 cup pumpkin puree
- 1 & 1/2 tablespoon pumpkin pie spice
- 1 & 1/2 cup Swerve Confectioners
- 1 1/2 tsp pure vanilla
- 1/2 cup coconut flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 4 oz cream cheese room temperature
- 1 tablespoon heavy whipping cream
- 1 1/2 tablespoon Swerve Confectioners
- 1/2 teaspoon vanilla
Instructions:
Preheat oven to 350 degrees.
Mix the last 3 ingredients of the muffins in a bowl together and set aside.
Mix the remaining ingredients for the muffins together in a mixer. Once well mixed, add the dry ingredients.
Mix all of the ingredients together in a separate bowl.
Line muffin tin with paper liners. Scoop the pumpkin mixture into each liner. I use an ice cream scoop. Make a generous dent into each muffin and fill the center with the cream cheese mixture.
Bake for 20-22 minutes.
